Sunday is Pancake day for my family so I decided to put a twist on the classic pancake. I added cocao powder and shredded coconut to my pancake batter and topped it with crunchy peanut butter and fresh blueberries. It was like having a chocolate bar for breakfast but it made me feel amazing!

Recipe
-3/4 cup oat flour
-1/2 a mashed ripe banana
-1 cup plant milk (soy, coconut, almond, etc)
-1 tbsp cocao powder
-2 tbsp shredded coconut
-1/4 tsp baking soda
-1/2 tsp apple cider vinegar
Toppings
-Crunchy peanut butter
-Fresh blueberries

Heat a frying pan over medium heat. While that heats up, in a bowl combine oat flour, plant milk, banana, cocao powder, shredded coconut, baking soda and apple cider vinegar. Once the pan is hot add a little oil or plant based butter. Next, spoon your pancake batter into little round disks. Once air bubbles have started to pop in the pancakes, flip and cook for 1-2 minutes or until cooked through. Repeat with the remaining batter. Transfer to a plate and top with lots of the toppings. Enjoy!
