Serve up pancakes in style with strawberry & peanut butter goodness ✨🍓🙋‍♀️ these pancakes combine almond meal for healthy fats, oats for extra fibre and chocolate chips for fun! 😉

✨ INGREDIENTS —
Makes 5-6 pancakes, approx. 2 serves
• 1/4 cup almond meal⠀
• 1 cup oat flour (ground oats)⠀
• 1/2 tsp baking powder⠀
• pinch of salt⠀
• 1 egg⠀
• 1 tsp honey/maple syrup if desired⠀
• 1/4 cup milk (I used soy milk)
• Extra virgin olive oil or coconut oil, for cooking⠀
• Toppings: banana, strawberries, peanut butter, chocolate chips
⠀⠀⠀⠀⠀⠀⠀⠀⠀
✨ METHOD —
1️⃣ Mix dry pancake ingredients together. Add wet ingredients and mix until just combined.⠀
2️⃣ Heat oil in frying pan to medium heat. Add spoonfuls of batter (keep them small – easier to flip), making them round with the back of your spoon. Flip pancakes when bubbles on top start to pop.⠀
3️⃣ Remove from pan when golden brown on both sides.
4️⃣ Plate up pancakes. Add toppings and enjoy! 🥰

Note: these pancakes are wheat-free so suitable for wheat allergy but they aren’t coeliac-friendly because they contain oats.
