No-banana oat pancakes

I made these yesterday for a lil self care brunch moment. It’s been a rough week. I have so much studying to do and life is getting more busy. Yesterday I took most of the day off to rest and I’m so glad for it because I feel more capable today! 😊

So take this as your sign that you don’t need to fear rest 💛

🥞🥞🥞🥞🥞
~ wet
1/4c almond milk + 1tsp ACV
1/4c apple sauce
1T olive oil (can’t taste it don’t worry)
Vanilla extract(optional)

~ dry
1/2c oat flour
1T ground flaxseed
1/2T coconut sugar (or sub maple syrup)
1/2tsp baking soda + pinch salt
Cinnamon to taste

1. Let pan heat up fully on medium-low while combining the wet ingredients
2. Fold in the dry ingredients (don’t mix too much) it will bubble and foam from the ACV & baking soda reacting
3. Grease the pan with olive oil and cook abt 2 minutes each side. Makes 5 medium pancakes

homemade coconut yogurt mixed with @alohamoment protein & cinnamon, blueberries, creamy almond butter, maple syrup
