Made oatmeal veggie pancakes for dinner last night! They were loaded with carrot…


Made oatmeal veggie pancakes for dinner last night! They were loaded with carrots, black beans, bell peppers and lots of spices that made them taste almost like polourie. The recipe I used made about 9 pancakes, but I added more liquid than the recipe called for.

Ingredients:
1 cup oats, 2 tbsps flour (or besan, chickpea flour), 1 – 2 cups of finely chopped veggies of choice, ½ cup plain yogurt or kefir, water as needed if batter is too thick or dry.

Spices:
1 tsp garlic powder, 1 tsp onion powder, ½ tsp ground ginger or ginger paste, ½ tsp turmeric powder, 1 tsp garam masala, ½ tsp paprika, ¼ tsp cayenne, 1 tsp geera (cumin), black pepper and salt to taste.

Grind your oats in a blender/food processor. Add it to a mixing bowl along with flour, and spices. Next, add your yogurt/kefir and water. Add the water little by little. We don’t wanna make this too runny. Mix well. Finally, mix I all your veggies. Cook as you would regular pancakes and enjoy!
