Blackened Smoked Salmon with Mango and Chilli Salsa + mexican rice

This was our first time smoking Salmon using a portable smoker with hickory wood chips and it was a success! The spicy smoky flavour of the salmon just blends well with the sweetness of the salsa.👍🏻

Recipe for the blackened rub:
– 2 tbsp smoked paprika, 1 tsp onions powder, 2 tsp Pink Himalayan salt, 1 tsp garlic powder, 1 tsp black pepper, 1 tsp dried thyme, 1 tsp dried oregano, 2 tsp cayenne pepper – mix and rub the seasoning on to 600g salmon.

MANGO CHILLI SALSA
– In a bowl mix 1 diced large ripe mango, 1 diced jalapeño, 1/2 diced medium red onion, 2 diced small sweet peppers, 1-2 lime juice, salt and chopped coriander. .
